GREEK CHICKEN MEATBALL with TZATZIKI

INGREDIENTS

  • 1 pound ground chicken breast

  • 1 egg

  • 1/2 cup parmesan cheese

  • 1/2 teaspoon dried oregano

  • 1 teaspoon salt

  • 1 pinch black pepper

  • 1 cup plain low-fat Greek yogurt

  • 1 cup cucumber, diced

  • 1 tablespoon lemon juice (about 1/2 lemon)

  • 1 teaspoon dried dill

  • 1 teaspoon dried parsley

  • 1/2 teaspoon salt

  • 1 1/2 cups protein pasta, dry

  • 1 cup cherry tomatoes, halved

  • 4 cloves garlic, minced

  • 1/4 cup feta cheese, crumbled, plus more for serving

  • Salt and pepper

INSTRUCTIONS

  1. Preheat your oven to 350°F.

  2. In a large bowl, whisk together the eggs and cottage cheese until well combined.

  3. In a skillet over medium heat, add the olive oil and veggies. Cook until tender.

  4. Add your veggies and chicken sausage to the egg mixture.

  5. Stir in the shredded cheese and season with garlic powder, salt, and pepper to taste.

  6. Pour the mixture into a greased 9x13 casserole dish.

  7. Bake for 45-55 minutes or until the top is set and no longer liquidy.

  8. Let it cool, slice it into 6 squares.
